β€’2 lb sweet potatoes, peeled and cut into 1-inch pieces
β€’4 tbsp grapeseed oil
β€’salt and black pepper, to taste
β€’3 tbsp pickled jalapeno brine
β€’10 oz baby spinach
β€’ΒΌ cup sliced pickled jalapenos
β€’3 scallions, thinly sliced
β€’4 oz feta cheese, crumbled
