3 large yellow onions, thinly sliced
4 tablespoons butter
4 cloves garlic, minced
2 teaspoons fresh thyme
1/2 cup dry white wine
3 cups beef broth
1 cup heavy cream
12 oz short pasta (penne or fusilli)
1.5 cups Gruyère cheese, shredded
1/2 cup Parmesan cheese, grated
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons fresh parsley, chopped

Cooking Instructions

    In a large, deep skillet or Dutch oven, melt butter over medium heat. Add sliced onions and a pinch of salt, cooking for 15-18 minutes, stirring occasionally, until deeply golden and caramelized.

    Add minced garlic and thyme to the caramelized onions, cooking for 1 minute until fragrant.

    Pour in white wine to deglaze the pan, scraping up any browned bits from the bottom. Cook for 2 minutes until wine reduces by half.

    Stir in the uncooked pasta, ensuring it's submerged in the liquid. Reduce heat to medium-low, cover, and simmer for 12-15 minutes, stirring occasionally, until pasta is al dente and liquid is mostly absorbed.

    Remove from heat and stir in Gruyère and Parmesan cheese until melted and creamy. Let stand for 2-3 minutes to thicken.
