Green chilies – 2-3, slit
Coconut – 1/3 cup, fresh or frozen
Cumin seeds – ¼ teaspoon
Curry leaves – 5-6
Ghee (Clarified butter) – 3 teaspoons
Mustard seeds – ¼ teaspoon
Salt – to taste
Toor dal (split skinned pigeon peas or arhar dal)– ½ cup
Turmeric powder – ¼ teaspoon
Water – 1 ½ cup + 1 cup

Cooking Instructions

    Wash the toor dal under running cold water till water runs clear.

    Add washed dal to the pressure cooker along with 1 ½ cups of water. Close the lid and turn the heat on medium. And let it whistle 7-8 times on medium heat.While dal is cooking make paste from coconut and turmeric powder.

    Let the pressure go down by itself. Then open the cover.

    Add another 1 cup of water to cooked dal and make smooth puree like using immersion blender or grinder.Now heat the ghee in another small pan. Once hot add mustard seeds and let them pop. Then add cumin seeds, let them sizzle.Then add slit green chilies and curry leaves. Sauté for 30 seconds.

    Add coconut paste. And sauté for 2-3 minutes.

    Add this tempering to the dal. also add salt to taste.

    Mix well. And let it boil for 5-7 minutes.

    Add more water if needed to adjust the consistency.Varan is ready to serve.
