β€’1 teaspoon brown mustard seeds
β€’2 cups cauliflower (1 lb or 450 g), cut into 1-inch florets
β€’1 to 2 green chilies, seeded and finely chopped
β€’1 teaspoon cumin seeds
β€’generous handful of dried curry leaves
β€’1 clove garlic
β€’1 to 2 teaspoons sea salt, to taste
β€’2 tablespoons sesame oil
β€’1 lb (450 g) fresh spinach, trimmed and roughly chopped
β€’1 large tomato, diced
β€’1/2 teaspoon turmeric
β€’1 teaspoon coarsely ground black peppercorns

Cooking Instructions

    Heat the oil in a large heavy-bottomed saucepan over medium-high heat. When hot, toss in the mustard seeds and cumin seeds and stir for 30 seconds or until the mustard seeds turn grey and begin to splutter and pop.Stir in the cauliflower and saut until it begins to lightly brown on the edges, about 2 to 3 minutes. Stir in the garlic and chilies and fry for another minute.Now pour in the coconut milk and let it simmer for a few minutes.
