An exquisite balance of oceanic sweetness and blistering heat, featuring gently poached lobster tails bathed in an aerated fermented Scotch bonnet and calamansi beurre blanc, accented by charred candied kumquats.
Prepare the poaching bath (beurre monté): In a heavy saucepan, bring 2 tablespoons of water to a gentle simmer over low heat. Whisk in 150g of cold cubed butter piece by piece to create a creamy, stable emulsion. Submerge the tarragon sprigs and maintain the temperature precisely between 54°C and 57°C (129°F–135°F).
Gently slip the lobster tails into the butter bath. Poach slowly for 9 to 11 minutes until the flesh becomes delicately opaque and just cooked through. Remove and keep warm.
In a separate saucepan, combine the minced shallots, white wine, and calamansi juice. Simmer over medium heat until the liquid reduces to a glossy syrup (about 2 tablespoons remaining).
Whisk in the fermented Scotch bonnet chili paste and heavy cream. Lower heat and vigorously incorporate the remaining 150g of chilled butter cube by cube to build a velvety emulsion. Strain through a fine-mesh chinois, season with fleur de sel, and aerate briefly with an immersion blender to achieve a light, frothy texture.
Dust the kumquat rounds with caster sugar and sear quickly on high heat using a culinary blowtorch or a smoking-hot dry cast iron pan for 30 seconds until deeply caramelized on the edges.
To plate: Spoon a pool of the aerated fiery Scotch bonnet emulsion into the center of warm shallow bowls. Slice each lobster tail into pristine medallions and arrange atop the sauce. Adorn with charred kumquat rounds, fresh finger lime pearls, and micro purple shiso leaves before serving immediately.
