For the Smoked Cauliflower Silk: Steam cauliflower florets until completely tender (about 12 minutes). Transfer to a high-speed blender with heavy cream, 50g butter, and a pinch of smoked sea salt. Blend on high until velvety smooth, then pass through a fine-mesh chinois. Keep warm.

For the Yuzu-Saffron Emulsion: In a small saucepan, combine minced shallot, white wine, and saffron threads. Simmer over medium heat until liquid is reduced to about 2 tablespoons. Lower heat to minimum and gradually whisk in 100g of cold cubed butter, one piece at a time, creating a rich beurre blanc. Stir in yuzu juice and season lightly. Keep warm at 50°C (120°F).

For the Lobster Poaching: Melt remaining 150g butter in a tight-fitting shallow pan over low heat, maintaining a constant temperature between 60°C and 65°C (140°F–149°F). Submerge the lobster tails fully and poach gently for 8 to 10 minutes until perfectly opaque and tender.

Plating: Spoon a generous swipe of Smoked Cauliflower Silk across pre-warmed porcelain plates. Slice each poached lobster tail neatly on a bias and set atop the purée.

Finish: Froth the Yuzu-Saffron Emulsion with an immersion blender and spoon warm foam over the lobster. Garnish with finger lime pearls and delicate sea fennel microgreens before serving immediately.
