Pan-roasted Challandais duck breast with a crisp peppercorn crust, served alongside velvety brown-butter parsnip mousseline, saffron-compressed baby pears, and an intense wild blackberry and Banyuls reduction.

Ingredients

•2 large Moulard or Challandais duck breasts (approx. 400g each)
•500g parsnips, peeled and chopped
•120g high-fat unsalted French butter (divided, for mousseline and basting)
•100ml heavy cream (35% fat)
•4 baby Seckel pears, peeled with stem intact
•250ml dry French white wine (such as Chablis)
•1 generous pinch saffron threads
•150g fresh wild blackberries
•80ml Banyuls wine or port
•250ml rich duck demi-glace
•1 large shallot, finely brunoised
•4 sprigs fresh garden thyme
•2 garlic cloves, crushed in skin
•1 tsp cracked wild Voatsiperifery or Tellicherry peppercorns
•Fleur de sel de Guérande to taste

Cooking Instructions

    In a small saucepan, bring the white wine, 100ml water, saffron, and a small pinch of salt to a gentle simmer. Add peeled baby pears and poach at 85°C (barely trembling) for 15-20 minutes until tender. Allow to cool completely in the saffron poaching liquid.

    Boil parsnips in salted water until knife-tender, then drain thoroughly. In a small skillet, heat 60g of butter until the milk solids turn a nutty golden-brown (beurre noisette). Puree the parsnips with warmed heavy cream and the brown butter in a high-speed blender until silky and frictionless. Pass through a fine tamis sieve and season with salt; keep warm.

    To prepare the jus, sauté the brunoised shallot in a drop of duck fat until translucent. Deglaze with Banyuls wine, scraping the bottom, and reduce by three-quarters. Add duck demi-glace and half of the fresh blackberries; gently simmer for 12 minutes. Strain through a fine-mesh chinois, pressing the berry solids lightly to extract flavor, then return to low heat. Whisk in 20g cold butter and the remaining whole fresh blackberries just before plating.

    Score the duck breast skin in a tight diamond pattern, taking care not to pierce the meat. Season generously with fleur de sel and cracked wild peppercorns. Place skin-side down in a cold cast-iron skillet over medium-low heat. Slowly render the fat for 10-12 minutes, discarding excess fat as it pools, until the skin is mahogany and extremely crisp.

    Flip the breasts onto the flesh side, add crushed garlic cloves, thyme sprigs, and remaining 40g butter. Baste continuously (arrosé) for 2 to 3 minutes until internal temperature hits 52°C for medium-rare. Transfer to a warm wire rack and rest for 7 minutes.

    To serve, carve each duck breast lengthwise into elegant, precise slices. Draw a smooth crescent of warm parsnip mousseline across preheated plates. Place carved duck adjacent, nestle a halved saffron pear alongside, and spoon the glossy blackberry Banyuls jus generously across the meat.
