Ingredients

•200g Valrhona Opalys 33% white chocolate, roughly chopped
•300ml cold heavy cream (36% fat), divided
•3 silver gelatin sheets (160 bloom), bloomed in ice water
•120ml unsweetened bergamot purée (or yuzu-lemon blend)
•1.5g agar-agar powder
•90g fresh egg whites (approx. 3 eggs), room temperature
•70g fine granulated sugar, divided
•75g finely ground roasted hazelnut flour
•60g confectioners' sugar, sifted
•1 ripe Bosc pear, peeled and cut into 3mm brunoise
•20g freshly prepared brown butter
•1 pinch smoked fleur de sel

Cooking Instructions

  1. 01

Preheat oven to 120°C (250°F). Spread chopped white chocolate evenly over a silicone baking mat and roast for 35–40 minutes, stirring thoroughly every 10 minutes, until uniformly deep blonde and nutty in aroma.

  2. 02

To prepare the dacquoise, increase oven temperature to 170°C (340°F). Sift hazelnut flour and confectioners' sugar together. Whip egg whites to soft peaks, then gradually incorporate 30g granulated sugar until a glossy, stiff meringue forms. Gently fold the dry ingredients into the meringue.

  3. 03

Spread the dacquoise batter 8mm thick onto a parchment-lined baking sheet. Bake for 12–14 minutes until lightly golden and springy. Cool completely, then stamp out four 6cm rounds using a pastry ring.

  4. 04

Heat 100ml of heavy cream to 80°C. Squeeze excess water from 2 bloomed gelatin sheets and dissolve into the warm cream. Pour over the caramelized white chocolate, whisking from center out to create a glossy emulsion. Cool to 30°C.

  5. 05

Whip the remaining 200ml cold heavy cream to soft, supple peaks. Delicately fold whipped cream into the cooled chocolate base in three additions to create a light, airy mousse. Pipe into silicone sphere or disc molds and freeze for 2 hours to set.

  6. 06

In a small saucepan, whisk bergamot purée, remaining 40g granulated sugar, and agar-agar. Bring to a rolling boil for 60 seconds while whisking. Pour into a shallow tray and refrigerate until completely firm (approx. 30 minutes). Once set, blend to a fluid gel using an immersion blender.

  7. 07

In a sauté pan over medium-high heat, toss the pear brunoise in warm brown butter and a micro-pinch of smoked fleur de sel for 2 minutes until tender-crisp. Cool to room temperature.

  8. 08

To assemble, place a round of hazelnut dacquoise on each chilled plate. Crown with the caramelized Opalys mousse. Top with a spoonful of warm brown butter pear brunoise, artfully dot the plate with bergamot fluid gel, and finish with a micro-sprinkle of smoked fleur de sel.

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
