200g Valrhona Opalys 33% white chocolate, roughly chopped
250ml heavy cream, divided (100ml and 150ml cold)
100ml whole milk
3 large egg yolks
1.5 sheets silver-grade gelatin (bloomed in ice water)
1/2 whole tonka bean, finely grated
200g fresh wild blackberries
30ml pure yuzu juice
2g agar-agar powder
60g caster sugar, divided
50g toasted buckwheat flour
50g unbleached all-purpose flour
75g brown butter (beurre noisette), chilled to pliable solid
2g Maldon sea salt flakes
12 fresh micro purple shiso leaves for garnish

Cooking Instructions

    Preheat the oven to 120°C (250°F). Spread white chocolate evenly on a silicone baking mat. Roast for 30–35 minutes, stirring thoroughly every 10 minutes, until it turns a deep amber-caramel hue and aromatic nutty notes develop. Set aside to cool slightly.

    To prepare the crémeux base, whisk egg yolks with 20g caster sugar in a bowl until pale. Bring whole milk, 100ml heavy cream, and grated tonka bean to 82°C (180°F) in a heavy saucepan, creating an anglaise base by tempering hot liquid into yolks and cooking gently until nappe.

    Remove anglaise from heat, dissolve the bloomed gelatin into it, and pour over caramelized white chocolate in three additions, using an immersion blender to create a glossy emulsion without incorporating air. Emulsify in the remaining 150ml cold cream, pour into quenelle molds, and chill for at least 4 hours.

    For the buckwheat sable, combine buckwheat flour, all-purpose flour, 40g sugar, and a pinch of salt. Cut in the brown butter until fine crumbs form. Press into a thin slab between parchment sheets and bake at 165°C (330°F) for 12–14 minutes until crisp and golden. Cool, then crush into architectural shards.

    For the fluid gel, simmer blackberries and yuzu juice with 20ml water for 4 minutes. Puree, strain through a chinois to yield 150ml liquid, then return to a simmer with agar-agar for 1 minute. Chill completely until set firm, then blend in a high-speed blender until mirror-smooth and transfer to a precision squeeze bottle.

    To plate: Scatter toasted buckwheat sable shards across the center of chilled ceramic plates. Demold or quenelle the caramelized white chocolate crémeux directly over the sable. Dot calibrated spheres of blackberry-yuzu fluid gel around the base. Finish with Maldon sea salt on the crémeux and garnish delicately with micro purple shiso.
