Rub the cold cubed butter into the dry mixture using your fingertips until it forms coarse, sandy crumbs. Spread onto a baking sheet lined with parchment paper and bake for 12-14 minutes until golden brown and fragrant. Let cool completely.

In a heatproof bowl set over simmering water, whisk the egg yolks and wildflower honey continuously until the mixture becomes pale, thick, and reaches 71°C (160°F) (about 5-6 minutes). Whip the chilled chamomile-infused cream to medium peaks. Gently fold the whipped cream into the cooled honey-egg yolk mixture in three additions, maintaining as much volume as possible. Pour the mixture into silicone half-sphere molds and freeze for at least 4 hours, or overnight, until firm.

To plate: Demold the chamomile semifreddo domes 5 minutes before serving. Scatter a neat line of the almond streusel across each plate. Place a semifreddo dome offset on top of the streusel.
