An elevated snack balancing the salty-savory notes of caramelized halloumi with the honeyed sweetness of fresh figs and a bright, citrus-herb crunch.

Ingredients

β€’250g premium Halloumi cheese, patted dry and cubed into 1-inch pieces
β€’1 tbsp white miso paste (Shiro Miso)
β€’1 tbsp Grade A maple syrup
β€’1 tsp unseasoned rice vinegar
β€’4 ripe Black Mission or Turkish figs, quartered
β€’2 tbsp roasted unsalted pistachios, finely crushed
β€’5 large fresh mint leaves, chiffonade
β€’1 tsp freshly grated organic lemon zest
β€’1 tbsp high-quality extra virgin olive oil

Cooking Instructions

  1. 01

In a small ramekin, whisk together the white miso, maple syrup, and rice vinegar until a smooth emulsion forms.

  2. 02

In a small bowl, combine the crushed pistachios, mint chiffonade, and lemon zest to create the gremolata. Set aside.

  3. 03

Heat a heavy-bottomed non-stick skillet over medium-high heat. Add the olive oil, followed by the halloumi cubes.

  4. 04

Sear the halloumi for 1-2 minutes per side until a deep golden-brown crust develops. Ensure all sides are crisp.

  5. 05

Reduce the heat to low. Pour the miso-maple glaze over the halloumi and toss rapidly for 30 seconds until the glaze reduces to a sticky lacquer. Remove from heat immediately to prevent burning.

  6. 06

Place each glazed halloumi cube on a serving platter. Top each with a quartered fig wedge.

  7. 07

Generously garnish with the pistachio gremolata and serve immediately while the cheese is warm and supple.

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
