An exquisite, restorative dish featuring pristine line-caught halibut gently poached in mineral-rich mushroom dashi, complemented by charred maitake, crisp shaved vegetables, and an aromatic chive oil.
Ingredients
Cooking Instructions
- 01
To make the chive oil, blanch the chives in boiling water for 10 seconds, immediately plunge into ice water, and pat completely dry. Blend on high speed with the grapeseed oil for 2 minutes, then strain through a coffee filter without pressing to achieve a crystal-clear vibrant green oil.
- 02
In a heavy-bottomed pot, combine the filtered mineral water, kombu, and dried mushrooms. Heat slowly over low heat to 65°C (150°F) and hold for 25 minutes. Remove from heat, strain through a fine-mesh chinois, and season with shiro shoyu to create a delicately balanced broth.
- 03
Immerse the shaved fennel in ice water for 10 minutes to curl and crisp, then drain thoroughly on paper towels.
- 04
Heat a dry cast-iron skillet over high heat. Sear the maitake mushroom clusters for 1–2 minutes per side until charred on the edges yet tender; season lightly with a pinch of fleur de sel.
- 05
Bring a pot of seasoned court-bouillon or salted mineral water to a controlled 56°C (133°F). Submerge the seasoned halibut fillets and gently poach for 8 to 10 minutes until the center becomes opaque, silky, and effortlessly flakes.
- 06
To assemble, place a poached halibut fillet in the center of four shallow, warm bowls. Artfully arrange charred maitake and crisp shaved fennel atop each fillet, and scatter finger lime pearls across the surface.
- 07
Pour the steaming clarified matsutake dashi tableside into the base of each bowl, finishing with several suspended drops of the vibrant green chive oil.
Cooking Reviews

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
