4 wild Branzino fillets (6 oz each), skin-on, scaled and pin-boned
1/2 tsp premium Spanish saffron threads
1 large fennel bulb, thinly sliced (fronds reserved for garnish)
4 baby globe artichokes, trimmed, halved, and choked
1/2 cup dry Mediterranean white wine, such as Vermentino
1 cup rich fish bone stock or court-bouillon
4 tbsp cold unsalted European butter, cubed
1/2 cup fresh pomegranate arils
1 tsp wild ground sumac
3 tbsp single-origin Sicilian extra virgin olive oil
1 medium shallot, finely minced
Maldon flake sea salt to taste

Cooking Instructions

    Steep saffron threads in 2 tablespoons of hot fish stock for 10 minutes to blossom color and aroma.

    In a heavy-bottomed saucepan, heat 1 tablespoon olive oil over medium flame. Add minced shallots and sliced fennel, cooking until translucent without browning (approx. 5 minutes).

    Deglaze the saucepan with Vermentino, reducing the liquid by half. Pour in remaining fish stock and steeped saffron stock. Simmer gently for 10 minutes until fennel is extremely tender.

    Transfer the fennel and reduced stock to a high-speed blender; purée until ultra-smooth. Pass through a fine chinois strainer back into a clean pan. Keep warm on ultra-low heat, whisking in 2 tablespoons of cold butter right before serving to create a glossy velouté.

    In a separate cast-iron pan, heat 1 tablespoon olive oil over high heat. Sear the halved artichokes cut-side down until deeply caramelized, about 4 minutes. Season with salt and set aside warm.

    Prepare the relish: In a small glass bowl, gently toss pomegranate arils, ground sumac, remaining olive oil, and chopped reserved fennel fronds.

    Score the skin of the Branzino fillets lightly in a crosshatch pattern. Pat thoroughly dry with paper towels and season both sides with sea salt.

    Heat a stainless steel skillet over medium-high heat with remaining oil. Place fish skin-side down, pressing firmly with a chef's press for 30 seconds to prevent curling. Cook skin-side down for 3-4 minutes until golden and crisp.

    Flip the fillets, add the final 2 tablespoons of butter to the pan, and baste the fish gently for 1 minute until just translucent in the center. Remove immediately from heat.

    To plate: Spoon a mirror of saffron-fennel velouté in the center of four warm plates. Arrange two artichoke halves off-center, rest a crispy Branzino fillet across them skin-side up, and spoon the sumac-pomegranate relish delicate along the edge.
