Ingredients

•4 Moulard duck breasts (approx. 200g each), dry-aged if possible
•45g lacto-fermented Fresno chili paste (or high-grade Sambal Oelek)
•1 tbsp red Sichuan peppercorns, lightly toasted and cracked
•250ml rich, gelatinous brown duck stock
•60ml aged sherry vinegar
•45ml wildflower honey
•400g parsnips, peeled and thinly sliced
•120ml heavy cream
•60g cold cultured unsalted butter, cubed
•15ml habanero-infused finishing oil
•Maldon sea salt flakes to finish
•10g micro red shiso leaves for garnish

Cooking Instructions

  1. 01

Prepare the parsnip silk: In a small saucepan, simmer the sliced parsnips with heavy cream and a pinch of fine salt over low heat until completely tender (about 15 minutes). Transfer hot to a high-speed blender with 20g of the cold cultured butter, blending until mirror-smooth. Pass through a fine chinois and keep warm.

  2. 02

Craft the Sichuan duck reduction: In a saucier, lightly toast the cracked Sichuan peppercorns over medium heat until fragrant. Pour in the duck stock, bring to a gentle simmer, and reduce by two-thirds until glossy and napping the back of a spoon. Strain out the solids, whisk in 20g of cold butter to emulsify, and hold warm.

  3. 03

Prepare the fermented chili gastrique: In a non-reactive saucepan, combine the wildflower honey and aged sherry vinegar. Bring to a rapid simmer until reduced to a syrupy consistency. Whisk in the fermented Fresno chili paste and simmer for 2 minutes to meld heat and acid. Remove from heat and reserve warm.

  4. 04

Score and render the duck: Score the duck breast skin in a tight, fine crosshatch pattern without penetrating the flesh. Season generously with fine sea salt. Place skin-side down in a cold cast-iron skillet over medium-low heat. Slowly render the fat for 10-12 minutes, continually discarding excess fat, until the skin is mahogany and extraordinarily crisp.

  5. 05

Finish and rest: Flip the duck breasts skin-side up, increase the heat to medium, and baste with the remaining 20g butter for 2 to 3 minutes until an internal temperature of 52°C (125°F for medium-rare) is reached. Transfer to a warm wire rack and rest for 8 minutes to redistribute the juices.

  6. 06

Plate: Swipe a generous arc of parsnip silk across each warmed plate. Slice each duck breast lengthwise into pristine medallions and arrange atop the plate. Glaze the crispy skin with a delicate brush of the fermented chili gastrique. Pool the Sichuan duck jus alongside, finish with droplets of habanero chili oil, and garnish with Maldon salt and micro red shiso.

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
