Infuse Chili Oil: Heat grapeseed oil to 160°C (320°F). Pour hot oil over toasted crushed Szechuan peppercorns and Gochugaru flakes. Let steep for 20 minutes, then pass through fine cheesecloth and set aside.

Make Parsnip Puree: Steam parsnip pieces until completely tender (about 15 minutes). Transfer to a high-speed blender with warm heavy cream, butter, 1 tsp of the infused Szechuan chili oil, and a pinch of salt. Puree until silky smooth, then pass through a fine chinois sieve.

Prepare Habanero-Blackberry Gastrique: In a small saucepan over medium heat, caramelize honey until light amber. Deglaze with apple cider vinegar. Add minced habanero and blackberries. Simmer for 10-12 minutes until blackberries break down and sauce turns glossy. Strain through a fine-mesh sieve, pressing solids gently to extract clear syrup; season with salt.

Sear Duck Breast: Score duck skin in a fine cross-hatch pattern without piercing the flesh. Season skin side generously with salt. Place duck skin-side down in a cold cast-iron skillet over low heat. Render fat slowly for 10-12 minutes until skin is thin and golden brown. Increase heat to medium-high, flip, and cook meat side for 2-3 minutes to reach medium-rare (57°C/135°F internal). Rest duck for 5 minutes.

Plating: Draw a swoop of Szechuan parsnip puree onto warmed plates. Slice duck breasts on a bias and lay alongside the puree. Spoon glossy Habanero-Blackberry Gastrique around the duck, drizzle droplets of Szechuan chili oil, and garnish with micro nasturtium leaves and flaky sea salt.
