1 small habanero pepper, charred and deseeded
2 tbsp fresh yuzu juice
4 tbsp cold unsalted butter, cubed
300g parsnips, peeled and diced
100ml heavy cream
60ml grapeseed oil
1 medium shallot, finely minced
2 cloves garlic, finely minced
1 tsp raw wild honey
Flaky sea salt to taste

Cooking Instructions

    Prepare the chili crisp by gently heating grapeseed oil in a small saucepan with minced shallot, garlic, cracked Sichuan peppercorns, and crushed dried chilis over low heat for 8 minutes until aromatic and infused; strain oil, reserving crisp bits separately.

    Boil diced parsnips in salted water until fork-tender (approx. 12 minutes). Drain and blend in a high-powered blender with heavy cream and 1 tablespoon of butter until velvety smooth; season with salt and keep warm.

    For the emulsion, blister the habanero over an open flame until skin is blackened. Peel, deseed, and blend with yuzu juice and honey. Transfer to a small pan over gentle heat, then whisk in 3 tablespoons of cold cubed butter piece by piece to create a glossy, spicy acid reduction.

    Score the skin of the duck breasts in a delicate crosshatch pattern without cutting into the flesh. Season generously with flaky sea salt.

    Place duck breasts skin-side down in a cold stainless steel skillet. Turn heat to medium-low to slowly render the fat for 8-10 minutes until skin is golden and ultra-crisp. Flip and cook for an additional 2-3 minutes for medium-rare (internal temp 130°F/54°C). Rest on a warm plate for 5 minutes.
