2 duck breasts (approx. 200g each), skin scored in a fine diamond pattern
1 tbsp Szechuan peppercorns, lightly toasted
2 tbsp fermented chili bean paste (Doubanjiang)
1.5 tbsp raw wildflower honey
1 tbsp Chinkiang black vinegar
100 ml rich duck stock or veal demi-glace
1 orange habanero pepper, deseeded and charred
200g fresh sweet corn kernels
40g cold unsalted butter, cubed
50 ml heavy cream
1 firm Fuyu persimmon, mandoline-sliced into thin ribbons
2 tbsp fresh lime juice
Flaky Maldon sea salt to taste
10g micro cilantro for garnish

Cooking Instructions

    In a small vacuum seal bag or bowl, combine persimmon ribbons with lime juice, a pinch of salt, and a drop of habanero oil. Seal under high pressure or marinate for 30 minutes to compress.

    For the corn emulsion: Sweat sweet corn and charred habanero in 10g butter over medium heat until tender. Add heavy cream, bring to a simmer for 3 minutes, then transfer to a high-speed blender. Blend on high until velvety smooth, pass through a fine tamis sieve, season with salt, and keep warm.

    For the Szechuan-Chili Glaze: Coarsely crush toasted Szechuan peppercorns. In a small saucepan over medium heat, combine Doubanjiang, honey, black vinegar, duck stock, and crushed peppercorns. Simmer gently for 8-10 minutes until reduced to a glossy, coat-the-back-of-a-spoon glaze. Keep warm.

    Place scored duck breasts skin-side down in a cold stainless-steel pan. Turn heat to medium-low to render duck fat slowly, basting occasionally, for about 8-10 minutes until skin is deeply golden and crispy.

    Flip duck breasts and cook for an additional 2-3 minutes until internal temperature reaches 54°C (129°F) for medium-rare. Remove duck from pan, generously brush with the warm Szechuan-Chili Glaze, and let rest on a wire rack for 5 minutes.

    To plate: Spoon a generous swoosh of smoked habanero-corn emulsion onto warmed plates. Slice duck breasts into neat medallions and arrange along the purée. Accent with folded compressed persimmon ribbons, drizzle extra glaze, and finish with micro cilantro and Maldon sea salt.
