β€’100 ml dry Mediterranean white wine (such as Assyrtiko)
β€’150 ml concentrated fish stock
β€’60 ml heavy cream
β€’50 g cold unsalted butter, cubed
β€’100 g pitted Kalamata olives, rinsed
β€’30 g superfine sugar
β€’30 ml high-quality aged balsamic vinegar
β€’40 ml single-origin extra virgin olive oil
β€’60 g fresh samphire (sea asparagus)
β€’Maldon flaky sea salt and freshly cracked white pepper to taste

Cooking Instructions

    Prepare the Black Olive Caramel: Puree the Kalamata olives in a high-speed blender until completely smooth. In a small saucepan over medium heat, melt the superfine sugar until a light golden amber caramel forms. Deglaze carefully with aged balsamic vinegar, then whisk in the olive puree. Pass through a fine-mesh tamis sieve and keep warm.

    Make the Saffron-Fennel Base: Sweat the minced shallots and sliced fennel in 10 ml of olive oil over medium-low heat until soft and translucent without taking on color (about 10 minutes). Add the dry white wine and reduce by half. Stir in the saffron threads and fish stock, simmer gently for 15 minutes.

    Emulsify the Sauce: Transfer the fennel mixture to a blender with heavy cream and process on high until silky smooth. Strain back into a clean saucepan. Right before serving, mount with cold cubed butter using an immersion blender until light, foamy, and glossy. Season lightly with white pepper.

    Blanch the Garnish: Quick-blanch the samphire in boiling unsalted water for 30 seconds, then immediately shock in ice water. Drain thoroughly and toss with a few drops of olive oil.

    Pan-Sear the Sea Bass: Score the skin of the sea bass fillets lightly and pat completely dry. Season skin side with flaky sea salt. Heat remaining olive oil in a heavy stainless steel or cast-iron skillet over high heat until shimmering. Place fillets skin-side down, pressing gently with a fish spatula for 10 seconds to ensure even contact. Lower heat to medium and cook for 4 minutes until skin is glass-crisp. Flip and cook for 45-60 seconds until just translucent in the center.

    Plating: Pool warm Saffron-Fennel Emulsion in the center of four pre-heated shallow bowls. Place a sea bass fillet skin-side up in the middle. Artfully dot black olive caramel around the perimeter, nestle blanched samphire alongside the fish, and finish with reserved fennel fronds.
