4 skin-on Wild European Sea Bass fillets (160g each), scaled and pin-boned
100g chickpea flour
120ml lukewarm water
60ml cold-pressed extra virgin olive oil, divided
1 large fennel bulb, thinly sliced, fronds reserved for garnish
2 medium shallots, finely diced
2 garlic cloves, minced
100ml dry Mediterranean white wine (Assyrtiko or Vermentino)
250ml artisanal fish stock
0.5g high-grade saffron threads, steeped in 2 tbsp warm water
50g cold unsalted butter, cubed
30ml heavy cream
2 tbsp salt-cured capers, rinsed and coarsely chopped
2 tbsp golden raisins, plumped in warm water and chopped
2 tbsp pine nuts, toasted
1 tbsp aged sherry vinegar
2 tbsp finely chopped fresh flat-leaf parsley
Fleur de sel and freshly cracked white pepper to taste

Cooking Instructions

    Prepare the Socca Crisps: Whisk chickpea flour, lukewarm water, 1 tbsp olive oil, and a pinch of salt until smooth. Let rest for 20 minutes. Spread paper-thin on a silicone baking mat and bake at 200°C (390°F) for 10-12 minutes until golden and crisp. Break into geometric shards once cooled.

    Make the Caper-Raisin Relish: In a small bowl, combine chopped capers, plumped golden raisins, toasted pine nuts, chopped parsley, sherry vinegar, and 2 tbsp extra virgin olive oil. Season with white pepper and let infuse at room temperature.

    Sweat Aromatics for Emulsion: Heat 1 tbsp olive oil in a saucepan over medium heat. Add sliced fennel bulb, shallots, and garlic. Sweat without browning for 6-8 minutes until soft.

    Blend and Pass Emulsion: Deglaze pan with white wine and reduce by half. Add fish stock and steeped saffron with its water. Simmer for 10 minutes. Transfer contents to a high-speed blender with heavy cream and cold cubed butter; blend on high speed until completely homogenized. Strain through a fine chinois, season with fleur de sel, and hold warm.

    Score Sea Bass: Lightly score the skin of each sea bass fillet with shallow diagonal cuts to prevent curling. Thoroughly dry the skin using paper towels and season both sides with sea salt.

    Sear the Fish: Heat remaining olive oil in a heavy stainless steel skillet over medium-high heat until shimmeringly hot. Lay fillets skin-side down, pressing firmly with a flexible fish spatula for 10 seconds. Cook for 3-4 minutes until skin is crispy and golden. Flip gently and kiss the flesh side for 45 seconds before removing from heat.

    Plate and Serve: Pour a pool of bright yellow saffron-fennel emulsion into the center of warm shallow bowls. Gently rest the sea bass fillet skin-side up over the sauce. Crown with a spoonful of caper-raisin relish, tuck a socca shard alongside, and garnish with delicate fennel fronds.
