4 wild sea bass fillets (6 oz each, skin-on, scaled, pin-boned)
1.5 cups cooked cannellini beans
1/2 tsp high-grade saffron threads
1/4 cup single-estate extra virgin olive oil
1/2 cup pitted Kalamata olives
1 tbsp finely minced preserved lemon peel
1 cup datterini or heirloom cherry tomatoes
2 cloves confit garlic
1 tbsp fresh Greek oregano leaves
8 caper berries, halved
1/4 cup dry white wine (preferably Assyrtiko)
3 tbsp high-fat unsalted European butter
Maldon flaky sea salt and freshly cracked black pepper to taste

Cooking Instructions

    Steep saffron threads in 2 tablespoons of warm water for 10 minutes to release flavor and rich color.

    In a high-speed blender, combine cooked cannellini beans, steeped saffron water, confit garlic, 1 tablespoon of butter, and a pinch of Maldon salt. Blend until silky smooth, pass through a fine sieve, and hold warm.

    Pulse Kalamata olives, preserved lemon peel, and 2 tablespoons of extra virgin olive oil in a small food processor until a coarse, glossy emulsion forms.

    Lightly score the skin of the sea bass fillets in a crosshatch pattern. Pat thoroughly dry with paper towels and season the skin generously with salt.

    Heat a heavy cast-iron skillet over high heat with 2 tablespoons of olive oil. Place fish skin-side down, applying gentle pressure with a spatula for 10 seconds to ensure even contact. Cook undisturbed for 4 minutes until skin is golden and ultra-crisp.

    Flip fillets carefully, reduce heat to medium, and add remaining 2 tablespoons of butter, Assyrtiko wine, and datterini tomatoes to the pan. Baste the fish continuously with foaming butter for 2 minutes until cooked through.

    To serve, spread a warm swoop of saffron-cannellini purée across four warmed plates. Nestled a sea bass fillet skin-side up in the center, scatter blistered tomatoes and caper berries, dress delicately with the black olive-citrus emulsion, and finish with fresh oregano leaves and Maldon salt.
