4 skin-on wild Mediterranean sea bass fillets (6 oz each), pin-boned
4 tbsp high-quality extra virgin olive oil, divided
1 generous pinch Greek saffron threads
1 medium fennel bulb, finely diced
2 medium shallots, minced
1/2 cup dry white wine
1 cup artisanal fish stock
1/4 cup heavy cream
3 tbsp unsalted butter, chilled and cubed
4 baby globe artichoke hearts, trimmed and halved
200g cherry tomatoes on the vine
3 garlic cloves, smashed
4 fresh thyme sprigs
1/2 cup Castelvetrano olives, pitted and finely diced
1 tbsp nonpareil capers, drained and coarsely chopped
1 fresh lemon, zested and juiced
Flaky sea salt and freshly cracked black pepper to taste

Cooking Instructions

    Prepare the slow-roasted tomato confit: Preheat oven to 130°C (265°F). Arrange cherry tomatoes on the vine in a small baking dish with 2 tbsp olive oil, smashed garlic, and thyme sprigs. Roast for 35 minutes until gently blistered and tender.

    Make the saffron-fennel base: Heat 1 tbsp olive oil in a saucepan over medium heat. Sauté diced fennel and shallots for 6 minutes until soft and translucent. Add saffron threads and white wine; reduce by half.

    Simmer sauce: Pour in fish stock and simmer for 10 minutes. Stir in heavy cream and remove from heat.

    Emulsify sauce: Transfer sauce to a high-speed blender and blend until completely smooth. Pass through a fine chinois back into a warm saucepan. Whisk in 2 tbsp chilled butter over low heat to create a glossy emulsion; season with sea salt and a splash of lemon juice.

    Char artichokes: Heat a dry cast-iron skillet over high heat. Toss artichoke halves with a drizzle of olive oil, salt, and pepper. Sear cut-side down for 4 minutes until deeply caramelized.

    Mix relish: In a small bowl, combine diced Castelvetrano olives, chopped capers, lemon zest, and 1 tbsp olive oil. Set aside.

    Sear the sea bass: Score the fish skin lightly in a crosshatch pattern and dry thoroughly with paper towels. Season skin side with sea salt. Heat remaining olive oil in a stainless steel skillet over medium-high heat. Place fillets skin-side down, pressing gently with a fish spatula for 10 seconds to ensure full skin contact.

    Finish the fish: Fry for 3-4 minutes until skin is golden and crisp. Flip fillets, add remaining 1 tbsp butter, and butter-baste the flesh for 1-2 minutes until barely cooked through. Remove to a warm resting tray.

    Plate the dish: Spoon a generous pool of hot saffron-fennel emulsion onto the center of four warm shallow bowls. Place sea bass skin-side up over the emulsion. Garnish with charred artichokes, warm confit tomatoes, and a delicate dotting of olive-caper relish.
