Char whole eggplants directly over an open gas flame or under a high broiler, turning occasionally, until the skin is fully blackened and the flesh collapses completely (18-20 mins).

Scoop out warm eggplant flesh into a fine strainer, discarding char. Let drain 5 minutes, then blend in a high-speed blender with tahini, 30ml olive oil, and sea salt until ultra-smooth and velvety. Reserve warm.

In a small bowl, combine shaved fennel, sliced kumquats, white balsamic vinegar, a pinch of sugar, and sea salt. Allow to quick-pickle at room temperature for 20 minutes.

To make the emulsion, bring orange juice, lemon juice, and saffron threads to a gentle simmer in a small saucepan. Reduce liquid by half. Lower heat to minimum and gradually whisk in cold cubed butter piece by piece to create a glossy, emulsified sauce. Season with a touch of salt.

Score red mullet skin lightly. Heat remaining olive oil in a heavy stainless steel skillet over high heat until shimmering. Season fillets with flaky salt and place skin-side down, gently pressing with a spatula for 10 seconds to keep flat.

Sear fish for 2.5 to 3 minutes until skin is golden and crispy. Turn fillets gently and cook skin-side up for just 30 seconds. Remove from heat immediately.

Spoon a smooth arc of eggplant silk across each warmed plate. Place seared mullet skin-side up over the puree. Arrange drained pickled fennel, kumquats, and caper berries artfully around the dish. Drizzle warm saffron-citrus emulsion around the plate and finish with fresh dill and fennel fronds.
