One Pan Roasted Lemon Pepper Salmon and Garlic Parmesan Asparagus

Crisp-skinned Mediterranean red mullet served atop a silky saffron-infused fennel velouté, brightened with charred Meyer lemon tapenade, bronze fennel fronds, and Arbequina olive oil.
Bloom the saffron threads in 30 ml of warm fish fumet for 15 minutes to fully extract color and aromatic depth.
In a heavy saucepan, sweat the shallots and shaved fennel in 20 ml of olive oil over low heat until completely tender without color. Deglaze with white wine and reduce by three-quarters.
Add the remaining fish fumet and bloomed saffron liquor to the fennel. Simmer for 8 minutes, transfer to a high-speed blender, and process until velvet-smooth. Mount with 30 g cold cubed butter, pass through a fine chinois, and keep warm.
Prepare the tapenade by gently tossing minced Kalamata olives, charred Meyer lemon segments, lemon zest, fennel pollen, and 20 ml olive oil. Season lightly with fleur de sel.
Score the skin of the red mullet fillets with precise, shallow diagonal cuts. Pat the skin completely dry with paper towels and season both sides with sea salt.
Heat remaining 20 ml olive oil in a stainless-steel pan over medium-high heat. Lay the fillets skin-side down, gently pressing with a fish spatula for 30 seconds to prevent curling. Sear for 2 to 3 minutes until skin is golden and shatteringly crisp, then add remaining 15 g butter, flip briefly for 30 seconds to finish cooking, and remove from heat.
Ladle a pool of saffron-fennel velouté into warm shallow presentation bowls. Rest the crisp-skinned rouget fillet atop the sauce, garnish with charred lemon tapenade and reserved fresh bronze fennel fronds, and finish with a delicate drizzle of Arbequina olive oil.
