Simmer peeled sunchokes in cream, 50ml water, and 20g butter over low heat until completely tender (about 18 minutes). Transfer to a high-speed blender and puree until ultra-silky; season with fine sea salt and pass through a fine chinois.

In a small saucepan, combine the brunoised shallot, Champagne, and dashi. Simmer over medium-low heat until reduced to approximately 30ml (about 10β12 minutes).

Reduce heat to very low. Slowly whisk in 120g of the cold cubed butter piece by piece into the Champagne-dashi reduction to create a glossy emulsion. Season with white pepper and keep warm at 55Β°C (do not boil).

Quickly blanch the samphire tips in boiling water for 30 seconds, then shock immediately in ice water. Drain, dry, and toss with a drop of olive oil.

Season the dry turbot fillets with fleur de sel. Heat grapeseed oil in a heavy stainless steel or cast-iron skillet over medium-high heat until shimmering. Place turbot skin-side down, gently pressing with a fish spatula for 30 seconds to prevent curling.

Sear skin-side down for 4 minutes until deeply golden and crisp. Flip gently, add the remaining 40g butter, garlic, and thyme sprigs. Baste the flesh side continuously for 1.5β2 minutes until the internal temperature reaches 48Β°C (just translucent at the core). Rest 2 minutes.

To plate, swipe a warm pool of sunchoke mousseline across the center of each pre-warmed plate. Rest the turbot fillet skin-side up over the puree. Froth the Champagne dashi emulsion using an immersion blender and spoon aerated foam generously around the base. Garnish with blanched samphire and delicate bursts of finger lime caviar.
