β€’4 skin-on wild sea bass fillets (approx. 6 oz each)
β€’1 medium fennel bulb, finely diced (fronds reserved for garnish)
β€’1 large shallot, minced
β€’2 garlic cloves, thinly sliced
β€’1/2 tsp high-grade Spanish saffron threads
β€’1/2 cup dry Mediterranean white wine (e.g., Assyrtiko)
β€’3/4 cup artisanal seafood stock
β€’3 tbsp cold unsalted butter, cubed
β€’1/4 cup cold-pressed extra virgin olive oil, divided
β€’1.5 cups mixed heirloom cherry tomatoes
β€’2 tbsp nonpareil capers, drained and patted dry
β€’1/2 cup fresh basil leaves
β€’Fleur de Sel and freshly cracked black pepper to taste

Cooking Instructions

    Prepare the Saffron-Fennel Emulsion: In a small saucepan, sweat the diced fennel and shallot in 1 tablespoon olive oil over medium heat until soft and translucent (about 5 minutes). Add garlic and saffron, cooking for 1 minute until highly fragrant.

    Deglaze the pan with white wine and reduce by half. Pour in seafood stock and simmer gently for 8-10 minutes until fennel is completely tender.

    Transfer the mixture to a high-speed blender and process until silky smooth. Pass through a fine chinoise back into a clean pan, then whisk in cold butter cubes one at a time over low heat until emulsified. Season with Fleur de Sel and keep warm.

    Char Tomatoes & Crispy Capers: Heat 1 tablespoon olive oil in a skillet over high heat. Add heirloom tomatoes and cook undisturbed for 2-3 minutes until blistered and charred. Season with sea salt and remove from heat. In a small pan, flash-fry capers in 1 tablespoon oil for 1 minute until crisp; drain on paper towels.

    Make Herb Oil: Blanch fresh basil leaves in boiling water for 5 seconds, shock in ice water, squeeze dry, and blend with remaining olive oil. Strain through cheesecloth to yield a vivid green herb oil.

    Cook Sea Bass: Score the skin of sea bass fillets lightly and season both sides with Fleur de Sel and pepper. Heat 1 tablespoon olive oil in a heavy stainless-steel skillet over high heat until shimmering. Place fish skin-side down, pressing gently with a spatula for 10 seconds to prevent curling.

    Lower heat to medium-high and sear skin-side down for 4 minutes until golden and crisp. Flip gently and cook for another 1-2 minutes until flesh is opaque and cooked through.

    Plating: Spoon a generous pool of Saffron-Fennel Emulsion into the center of four warm shallow bowls. Place sea bass skin-side up in the center. Arrange charred tomatoes around the fish, drizzle with vibrant basil oil, and garnish with crisp capers and reserved fennel fronds.
