One Pan Roasted Lemon Pepper Salmon and Garlic Parmesan Asparagus

A masterclass in oceanic terroir: pristine wild turbot pan-roasted to pearlescent perfection, paired with an opulent sea urchin emulsion, sweet glazed salsify, and bright bursts of finger lime pearls.
Prepare the Salsify: Cut peeled salsify into 5cm batons. In a small sauté pan, cook gently with 30g butter, a splash of water, and a pinch of salt over medium-low heat until tender and glazed, about 15 minutes. Keep warm.
Reduce Sauce Base: In a saucier, combine minced shallots, Champagne vinegar, white wine, and fish fumet. Simmer over medium heat until reduced to approximately 30ml (a syrupy glaze).
Create the Sea Urchin Beurre Blanc: Lower heat to lowest setting. Whisk in 140g of cold cubed butter piece by piece to form a glossy emulsion. Blend the fresh sea urchin with an immersion blender until smooth, then whisk it directly into the warm beurre blanc. Strain through a fine chinois, season lightly with white pepper, and hold warm (do not boil).
Prepare the Succulents: Blanch the samphire in unsalted boiling water for 30 seconds, then immediately plunge into ice water. Drain thoroughly and toss with a drop of olive oil.
Pan-Roast the Turbot: Pat turbot fillets completely dry and season skin with fleur de sel. Heat grapeseed oil in a heavy stainless-steel or cast-iron skillet over medium-high heat until shimmering. Place fillets skin-side down, gently pressing for 10 seconds to ensure even contact. Cook undisturbed for 3 to 4 minutes until the skin is golden and ultra-crisp.
Baste (Arroser): Flip the fillets, add the remaining 30g butter, thyme, and crushed garlic to the pan. Baste the fish continuously with the foaming butter for 1-2 minutes until the internal temperature reaches 48°C (118°F). Transfer to a warm resting rack for 2 minutes.
Plating: Spoon a generous pool of Sea Urchin Beurre Blanc onto the center of each warm plate. Arrange glazed salsify batons and blanched samphire alongside. Rest a turbot fillet crisp skin-side up over the vegetables. Garnish the fish and sauce with fresh finger lime pearls and a sprinkle of fleur de sel.
