Ingredients

4 skin-on wild sea bass fillets (approx. 150g each), pin-boned
2 medium fennel bulbs, finely sliced (reserve fronds for garnish)
1/2 tsp high-grade Greek or Spanish saffron threads
60 ml heavy cream
40g high-fat unsalted cold butter, cubed
50g pitted Kalamata olives
15g all-purpose flour
1 large egg white
80 ml cold-pressed extra virgin olive oil, divided
150g baby heirloom tomatoes, halved
2 tbsp nonpareil capers, drained and rinsed
1 organic lemon (zested and juiced)
Maldon sea salt and freshly cracked white pepper to taste

Cooking Instructions

    Bloom the saffron threads in 2 tablespoons of warm water for 10 minutes to extract maximum color and aroma.

    To make the Black Olive Tuile: Purée olives, egg white, flour, and 15ml olive oil until smooth. Spread paper-thin onto a silicone baking mat and bake at 160°C (320°F) for 9–11 minutes until crisp. Cool and gently break into delicate shards.

    For the Saffron-Fennel Puree: Sweat sliced fennel in 15g butter over low heat until completely soft (about 12 minutes, without browning). Add bloomed saffron liquid and cream. Simmer for 3 minutes, then transfer to a high-speed blender and process until velvety smooth. Pass through a fine chinois strainer, season with white pepper and salt, and keep warm.

    For the Blistered Caper-Citrus Emulsion: Heat 30ml olive oil in a small pan over high heat. Add heirloom tomatoes and capers; sear rapidly for 2 minutes until blistered. Remove from heat, whisk in lemon juice, lemon zest, and remaining olive oil to form a broken warm dressing.

    Score sea bass skin finely at 5mm intervals and pat thoroughly dry with paper towels. Season skin side with fine sea salt.

    Heat remaining olive oil in a stainless steel pan over medium-high heat. Lay fish skin-side down, applying gentle downward pressure with a flexible spatula for 30 seconds to prevent curling. Cook skin-side down for 4 minutes until golden and hyper-crisp.

    Add remaining butter to the pan, flip fish gently to flesh side, baste with foaming butter for 45–60 seconds, then remove immediately to rest.

    To Plate: Arc a generous swoosh of warm Saffron-Fennel Puree across heated plates. Position the sea bass fillet skin-side up on top. Spoon blistered tomato-caper emulsion around the puree. Top fish with an olive tuile shard and garnish with fresh fennel fronds and Maldon sea salt.
