An exquisite Michelin-standard Mediterranean masterpiece pairing crispy-skinned wild sea bass with a silky saffron-fennel velvet, charred baby octopus, confit tomatoes, and a vibrant Meyer lemon herb oil.

Ingredients

4 (6-oz) skin-on, scaled wild Branzino fillets
8 small tenderized baby octopuses
2 medium fennel bulbs, thinly sliced (fronds reserved)
1/2 tsp Spanish saffron threads steeped in 2 tbsp warm water
1 cup high-quality extra virgin olive oil, divided
200g cherry tomatoes on the vine
4 garlic cloves, gently smashed
1 Meyer lemon, zested and juiced
1/2 cup fresh flat-leaf parsley
1/4 cup fresh dill
3 tbsp unsalted cold butter, cubed
3/4 cup clear fish stock
2 tbsp nonpareil capers, drained and patted dry
Fleur de sel and freshly cracked white pepper to taste

Cooking Instructions

    Blanch the flat-leaf parsley and dill in boiling salted water for 10 seconds, shock in ice water, drain completely, and blend with 1/2 cup olive oil and Meyer lemon zest. Strain through a fine-mesh chinois to create a vibrant green oil.

    Submerge cherry tomatoes and smashed garlic in 1/4 cup olive oil in a small saucepan over low heat (180°F/82°C) for 20 minutes until tender; set aside.

    Sauté sliced fennel in 2 tbsp olive oil over medium heat until translucent. Add fish stock and steeped saffron liquid. Simmer for 10 minutes until tender, then transfer to a high-speed blender with 2 tbsp cold butter. Puree until silkily smooth and season with white pepper and salt.

    Fry capers in 1 tbsp olive oil over high heat until crispy, about 2 minutes; drain on paper towels.

    Pat baby octopus dry, toss with 1 tbsp olive oil, Meyer lemon juice, salt, and flash-sear in a smoking-hot cast-iron skillet for 90 seconds per side until lightly charred.

    Score Branzino skin lightly, dry thoroughly, and season with sea salt. Heat remaining oil in a heavy stainless steel pan over high heat. Sear fish skin-side down using a fish weight for 3-4 minutes until golden and crisp. Flip, add remaining butter, basting for 1 minute until just cooked through.

    Spoon a generous pool of hot saffron-fennel velvet onto each warmed plate. Artfully place the seared Branzino skin-side up alongside charred baby octopus and confit tomatoes. Drizzle with vibrant herb oil, garnish with crispy capers and reserved fennel fronds.
