In the same skillet, toast pepitas, sesame seeds, plantain slices, and tomatoes until charred. Transfer to a high-powered blender with the rehydrated chiles and stock. Blend on high until silky smooth.

Pass the chile puree through a fine chinois into a saucepan. Stir in the Mexican dark chocolate over low heat until melted. Simmer mole gently for 30 minutes until thick and glossy; adjust seasoning with salt.

Place pineapple planks and mezcal into a vacuum seal bag and compress on high. Alternatively, marinate airtight in the refrigerator for 45 minutes.
