In the same skillet, sear the plantain slices until caramelized on both sides. Add toasted pepitas, almonds, black garlic cloves, and reconstituted chiles with 1/2 cup of their soaking liquid into a high-powered blender.

Purée the mixture until completely smooth, adding duck stock gradually to achieve a silky consistency. Pass through a fine-mesh chinois into a saucepan.

Simmer the mole over low heat for 15 minutes. Stir in the chopped Mexican dark chocolate until melted and glossy. Season with fine sea salt to taste, then cover and keep warm.
