Transfer carrots to a high-speed blender with the cold butter, ground Szechuan peppercorns, and a splash of the reserved water. Blend until silky smooth, adjust seasoning with salt, and pass through a fine-mesh chinois. Keep warm.

In a small saucepan, combine the chopped plums, light soy sauce, mirin, grated ginger, and honey. Simmer over medium heat for 10 minutes until the plums break down. Press the mixture through a fine sieve into a clean pan, discarding the solids, and reduce over low heat until it coats the back of a spoon.
