Transfer immediately to a high-speed blender with grated ginger, 1 tbsp cold butter, a pinch of salt, and a splash of warm water. Blend on high until completely smooth and velvety. Pass through a fine chinoise strainer and keep warm.

Score and Season Duck: Score the duck skin in a tight crosshatch pattern, taking care not to cut into the meat. Season both sides generously with sea salt and half of the crushed Szechuan peppercorns.

Render & Cook Duck: Place duck breasts skin-side down in a cold stainless steel pan. Set heat to low and render duck fat slowly for 8-10 minutes until skin is thin, deep golden brown, and extremely crisp. Drain excess rendered fat, flip breast, and sear meat side for 2-3 minutes until internal temperature reads 130°F (medium-rare). Transfer duck to a warm rest board for 5-7 minutes.

Sauté Maitake Mushrooms: In the same skillet with 1 tsp reserved duck fat, sear Maitake mushroom clusters over medium-high heat until edges are crisp and deeply caramelized (approx. 3 minutes). Season with flaky salt and set aside.

Craft Szechuan Cherry Glaze: Deglaze the hot skillet with Shaoxing wine, scraping up all browned fond. Pour in tart cherry juice, tamari, honey, and remaining Szechuan peppercorns. Simmer rapidly for 3 minutes until reduced to a glossy, syrupy glaze. Remove from heat and mount sauce by swirling in the remaining 1 tbsp cold butter.

Plating: Spread a generous arc of warm Ginger-Parsnip Silk across each warmed plate. Slice rested duck breast on a bias into 5-6 uniform pieces. Arrange duck along the purée alongside charred Maitake clusters. Spoon glossy Szechuan Cherry Glaze over the duck skin, and finish with micro cilantro and flaky salt.
