β€’4 wild Mediterranean red mullet fillets (approx. 150g each), skin-on and pin-boned
β€’2 medium fennel bulbs, finely sliced (fronds reserved for garnish)
β€’1/2 tsp high-grade Greek saffron threads, bloomed in 2 tbsp warm water
β€’60 ml dry Assyrtiko or Vermentino white wine
β€’150 ml low-sodium rich fish or shellfish stock
β€’60 ml cold-pressed Spanish extra virgin olive oil, divided
β€’45 g chilled unsalted butter, cubed
β€’2 tbsp baby capers, drained and patted thoroughly dry
β€’15 ml fresh Meyer lemon juice
β€’1/2 tsp Aleppo pepper flakes
β€’Maldon sea salt and crushed white pepper to taste

Cooking Instructions

    Prepare the Saffron-Fennel Velvet: Heat 15 ml of olive oil in a saucepan over medium-low heat. Add sliced fennel and a pinch of salt. Sweat slowly for 12 minutes without browned color until translucent and soft.

    Deglaze the fennel with the white wine and reduce by half. Add the fish stock and the bloomed saffron with its liquid. Simmer gently for 8 minutes until fennel is extremely tender.

    Transfer the hot fennel mixture to a high-speed blender. Add 30 g of chilled butter and blend on high for 2 minutes until glossy and silky. Pass through a fine chinois strainer, adjust seasoning with sea salt, and keep warm.

    Fry the Capers: In a small pan, heat 15 ml of olive oil over medium-high heat. Add dried capers and fry for 90 seconds until bloomed and crispy. Drain on paper towels.

    Emulsion: Whisk remaining 30 ml olive oil, Meyer lemon juice, Aleppo pepper, and remaining 15 g melted butter together until emulsified. Keep warm.

    Sear the Fish: Score the red mullet skin with a sharp knife in fine parallel cuts. Season both sides with Maldon salt and white pepper. Heat a heavy stainless steel or cast-iron skillet with a splash of oil over medium-high heat.

    Place fillets skin-side down, pressing gently with a chef's spatula for 10 seconds to ensure full skin contact. Cook for 2.5 to 3 minutes until skin is golden and crispy and flesh is 80% cooked through. Flip briefly for 30 seconds to finish, then immediately remove from heat.

    Plating: Spoon a generous swoosh of warm saffron-fennel velvet onto each pre-warmed plate. Carefully rest a red mullet fillet skin-side up on the puree. Drizzle with the warm citrus-Aleppo emulsion, scatter crispy capers around, and garnish with fresh fennel fronds.
