4 wild Mediterranean sea bass fillets (approx. 6 oz each), skin-on and pin-boned
4 whole globe artichokes, trimmed down to hearts
1/2 tsp high-grade Spanish saffron threads
1/2 cup Assyrtiko or Vermentino dry white wine
1 cup rich fish or shell stock
1/4 cup single-origin Greek extra virgin olive oil
4 tbsp chilled unsalted European butter, cubed
1 medium fennel bulb, finely sliced (fronds reserved)
1/2 cup pitted Kalamata olives, finely minced and moisture removed
3 tbsp panko breadcrumbs, toasted
2 tbsp freshly squeezed Meyer lemon juice
2 medium shallots, finely diced
Flaky Maldon sea salt and ground Aleppo pepper to taste

Cooking Instructions

    Prepare the Artichoke Silk: Sauté 1 diced shallot in 1 tbsp olive oil over medium heat until translucent. Add the trimmed artichoke hearts, cover with half the white wine and fish stock, and simmer for 15-20 minutes until tender. Transfer to a high-speed blender, add 2 tbsp chilled butter, and blend until silky smooth. Pass through a fine mesh chinois and season with salt and Meyer lemon juice.

    Craft the Saffron-Fennel Emulsion: In a small saucepan, sweat the remaining shallot and sliced fennel in 1 tbsp olive oil. Steep saffron threads in 2 tbsp warm fish stock for 5 minutes, then add to the pan along with the remaining white wine and stock. Reduce by half over low heat. Strain liquid into a tall beaker, cool slightly, and emulsify with 2 tbsp cold olive oil using an immersion blender until aerated and frothy.

    Prepare the Tapenade Crumb: Toss the minced dehydrated Kalamata olives with toasted panko breadcrumbs and a pinch of Aleppo pepper in a dry pan over low heat for 2 minutes until aromatic and crisp. Set aside.

    Sear the Sea Bass: Score the skin side of each bass fillet lightly in a diamond pattern and season thoroughly with flaky sea salt. Heat remaining olive oil in a stainless steel skillet over high heat. Lay fish skin-side down, gently pressing down with a parchment-lined press for 3 minutes until skin is shatteringly crisp. Turn, add remaining butter to foam, and baste for 1 minute. Remove and drain on paper towels.

    Plating and Assembly: Warm four shallow porcelain plates. Swipe a generous arc of warm Artichoke Silk across each plate. Center a piece of sea bass skin-side up. Aerate the warm Saffron-Fennel Emulsion to create a light foam and spoon delicately around the fish base. Garnish skin with a line of Tapenade Crumb and finish with delicate fennel fronds.
