A refined expression of the French and Aegean coastlines, featuring crispy wild sea bass rested over silky smoked aubergine, glossy saffron nage, and a bright toasted pine nut and preserved lemon gremolata.
Char the whole eggplants directly over an open flame or under a hot broiler until skins are blistered, blackened, and the interior is completely soft (approx. 15 minutes). Transfer to a bowl, cover tightly with plastic wrap for 10 minutes to steam, then peel away the charred skins. Drain the flesh in a fine mesh sieve to expel bitter liquids.
Transfer the drained eggplant flesh into a food processor with the microplaned garlic, 20 ml of olive oil, and a pinch of Fleur de Sel. Purée until silky and emulsified. Pass through a fine tamis sieve and keep warm.
In a heavy saucepan, sweat the minced shallots and diced fennel in 10 ml of olive oil over medium-low heat until translucent. Deglaze with dry white wine and reduce by half. Add the saffron and white fish fumet. Simmer until reduced by two-thirds into an intensely aromatic broth. Strain through a fine chinois, return to low heat, and whisk in 30 g of cold butter to mount the sauce into a glossy velouté consistency. Season with a touch of Espelette pepper.
For the gremolata, gently combine toasted pine nuts, brunoised preserved lemon, diced Castelvetrano olives, chopped parsley, and remaining 30 ml of extra virgin olive oil in a small glass bowl. Season lightly with Fleur de Sel.
Score the sea bass skin with shallow, crosswise incisions every millimeter. Pat completely dry using paper towels and season both sides with sea salt. Heat a stainless steel or cast-iron skillet over high heat with a thin film of oil. Place fish skin-side down, immediately applying gentle, even pressure with a chef's spatula for 30 seconds to prevent curling.
Cook on the skin side for 4 minutes until the skin is blistered and deeply crisp. Add remaining 15 g of butter to the pan, flip the fish carefully, and baste the flesh side off the heat for 45-60 seconds until gently cooked through to a pearlescent center.
To assemble: Swirl a generous spoonful of warm smoked aubergine purée onto the center of warm shallow porcelain bowls. Crown with the seared bass fillet, skin-side up. Spoon the golden saffron-fennel nage tableside around the perimeter, drape a quenelle of pine nut and olive gremolata over the fish, and garnish with delicate reserved fennel fronds.
