Add half the garlic and shallots; cook until soft. Transfer to a high-powered blender with 20g cold butter and splash of warm water, blending until silk-smooth. Pass through a fine chinois and season with salt.

Prepare the saffron-orange emulsion by combining the dry white wine, orange juice, saffron threads, and remaining minced shallot in a small saucepan over medium heat. Reduce until reduced to about 2 tablespoons of liquid.

Reduce heat to ultra-low and gradually whisk in 60g of cold diced butter piece by piece to form a rich, glossy emulsion. Season with a pinch of salt, cover, and keep warm off the heat.

Toast the pine nuts in a dry skillet over medium heat until golden brown. Toss immediately with ground sumac, chopped mint, parsley, remaining garlic, a drizzle of olive oil, and flaky sea salt to make the crunch gremolata.

Score the skin of the sea bass fillets lightly in a crosshatch pattern. Pat completely dry with paper towels and season with sea salt and Aleppo pepper.

Heat remaining olive oil in a heavy stainless steel or cast-iron skillet over high heat until shimmering. Lay fillets skin-side down, pressing gently with a fish spatula for 10 seconds to ensure full skin contact. Cook on the skin side for 3-4 minutes until golden and glass-like.

Add remaining 20g butter to the pan, flip the fish gently, and baste for 1 minute until tender and translucent in the center.
