4 skin-on wild Mediterranean sea bass fillets (approx. 160g each), pin-boned
1/2 cup raw shelled Bronte pistachios, finely crushed
1 tbsp artisan za'atar spice blend
2 large Italian eggplants
4 tbsp single-estate extra virgin olive oil, divided
1 fresh fennel bulb, sliced paper-thin on a mandoline
1/4 cup white balsamic vinegar
1/4 tsp high-grade saffron threads
1/4 cup dry Mediterranean white wine (such as Assyrtiko)
4 tbsp cold unsalted European butter, cubed
2 tbsp freshly squeezed Meyer lemon juice
1 small garlic clove, microplaned
2 tbsp fresh mint leaves and dill sprigs for garnish
Maldon flake sea salt and freshly cracked white pepper to taste

Cooking Instructions

    Prepare the pickled fennel: In a small saucepan, combine white balsamic vinegar, 1/4 cup water, 1 teaspoon sugar, and a pinch of salt. Bring to a boil, then pour hot liquid over thin fennel slices. Let steep at room temperature for 25 minutes, then drain thoroughly.

    Smoke the eggplant: Place eggplants directly over an open gas stovetop flame (or under a high broiler), turning periodically until skins are completely charred and flesh collapses (approx. 15 minutes). Transfer to a bowl, cover with plastic wrap for 10 minutes to steam.

    Purée eggplant: Scoop out tender eggplant flesh, discarding charred skin. Transfer flesh to a high-speed blender with microplaned garlic, 2 tablespoons extra virgin olive oil, and a pinch of salt. Blend until completely smooth and velvety. Pass through a fine chinois strainer and keep warm.

    Make the saffron emulsion: In a small saucepan, combine white wine and saffron threads. Simmer over medium heat until reduced by half. Reduce heat to low, stir in Meyer lemon juice, and slowly whisk in cold cubed butter one piece at a time until emulsified and glossy. Season lightly with salt and hold warm.

    Crust the sea bass: Season sea bass fillets on both sides with salt and za'atar. Lightly coat the flesh side (non-skin side) of each fillet with finely crushed pistachios, pressing gently so they adhere.

    Sear the sea bass: Heat 2 tablespoons olive oil in a large non-stick skillet over medium-high heat. Place fillets skin-side down and press gently with a spatula for 10 seconds to prevent curling. Crisp skin for 3 minutes, then carefully flip to crust-side for 1 to 2 minutes until fish is just cooked through and pistachios are golden.

    Plate the dish: Draw a swoosh of warm eggplant silk across warm modern ceramic plates. Nestled a sea bass fillet over the purée. Arrange delicate nests of pickled fennel alongside, accented with fresh mint leaves and dill sprigs. Spoon golden saffron emulsion around the plate and finish fish with Maldon sea salt.
