Modern Coastal / Kaiseki-French FusionMedium

Ingredients

•2 portions (140g each) wild turbot fillet, skinned and trimmed
•10g high-grade dried kombu kelp, gently wiped
•3 dried shiitake mushrooms, lightly cracked
•600ml pure spring or mineral water
•15g fresh ginger, sliced into thin coins
•60g fresh sea asparagus (samphire), fibrous bases removed
•40g tender baby tatsoi or baby bok choy leaves
•80g daikon radish, peeled and shaved into translucent ribbons
•1 fresh finger lime, halved to extract pearls
•1/2 tsp artisanal cold-pressed white sesame oil
•1 pinch mineral-rich fleur de sel
•10 fresh micro purple shiso leaves for garnish

Cooking Instructions

  1. 01

In a small saucepan, steep the dried kombu, cracked shiitake, and ginger coins in 600ml of mineral water over very low heat, keeping the water between 60°C and 65°C for 25 minutes. Do not allow to boil. Strain through a fine-mesh sieve lined with cheesecloth to obtain a pristine, aromatic broth.

  2. 02

Bring a separate pot of lightly salted water to a rapid boil. Blanch the shaved daikon ribbons and sea asparagus for 20 seconds, then immediately shock in an ice water bath to preserve crispness and vibrant green color. Drain and pat completely dry.

  3. 03

Season the turbot fillets with a delicate dusting of fleur de sel. Return the strained kombu-shiitake broth to a wide shallow sauté pan and stabilize the poaching temperature at precisely 58°C (136°F).

  4. 04

Gently submerge the turbot fillets into the warm aromatic broth. Cover with a parchment cartouche and slow-poach for 7 to 9 minutes, until the internal temperature registers 48°C (118°F) and the flesh is tender and translucent-flaky.

  5. 05

In the final 60 seconds of poaching, add the baby tatsoi leaves to the poaching liquid around the fish just until barely wilted.

  6. 06

Carefully lift the turbot fillets with an offset fish spatula and rest briefly on a warm plate. Gently whisk a few droplets of cold-pressed sesame oil into the warm poaching broth.

  7. 07

To assemble, coil the blanched daikon ribbons into loose rosettes at the center of two heated shallow ceramic bowls. Place a turbot fillet atop each base. Artfully arrange the wilted tatsoi and crisp sea asparagus around the fish.

  8. 08

Ladle 100ml of the hot, clarified broth into each bowl tableside. Crown each fillet with fresh finger lime pearls and micro purple shiso leaves, serving immediately.

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
