β€’1 tsp lacto-fermented yellow habanero paste
β€’1 medium shallot, micro-brunoise
β€’60 ml dry French vermouth
β€’120 g cold cultured unsalted butter, cubed
β€’150 ml fresh strained blood orange juice
β€’2 whole dried Morita chilies, toasted and stemmed
β€’1 tsp raw blue agave nectar
β€’20 fresh green shiso leaves
β€’100 ml neutral grapeseed oil
β€’1 fresh finger lime, pearls extracted
β€’Maldon smoked sea salt to finish

Cooking Instructions

    Prepare the Shiso Oil: Blanch fresh shiso leaves in boiling water for 4 seconds, immediately plunge into an ice bath, and squeeze dry. Blend with 100 ml grapeseed oil at 65Β°C on high speed for 3 minutes. Strain through a coffee filter without pressing and set aside in a squeeze bottle.

    Make the Morita-Blood Orange Glaze: In a small saucepan, combine blood orange juice, toasted Morita chilies, and agave nectar. Simmer over medium-low heat until reduced to a glossy, coats-the-back-of-a-spoon syrup (approx. 35 ml). Strain out chili solids and keep warm.

    Craft the Fermented Habanero Beurre Blanc: Sweat the minced shallots with dry vermouth and the fermented habanero paste in a heavy-bottomed saucier until the liquid is reduced to a syrupy tablespoon. Reduce heat to low and vigorously whisk in the cold cultured butter, one cube at a time, creating a glossy, silky emulsion. Season with fine salt, pass through a fine chinois, and hold at 50Β°C.

    Sear the Scallops: Heat clarified butter in a carbon steel or cast-iron skillet over high heat until just beginning to smoke. Season scallops lightly with salt on one side and place seasoned-side down into the pan. Sear undisturbed for 90 seconds until a deep golden, caramelized crust develops. Flip, baste with pan butter for 30 seconds, and transfer to a warm resting rack immediately.

    Assembly: Pool the warm fermented habanero beurre blanc onto the center of four shallow warmed ceramic bowls. Drizzle split beads of green shiso oil into the butter. Arrange three seared scallops atop the emulsion. Brush scallop crowns with the Morita-blood orange glaze. Finish with finger lime pearls and flakes of smoked Maldon salt.
