β€’1 cup fresh dark cherries, pitted and halved
β€’300g parsnips, peeled and roughly chopped
β€’3 tbsp unsalted butter, cubed
β€’1/2 cup heavy cream
β€’2 tbsp red wine vinegar
β€’1 tsp smoked sea salt
β€’1 tbsp wildflower honey
β€’6 fresh nasturtium leaves for garnish

Cooking Instructions

    Score the duck breast skin in a tight cross-hatch pattern, taking care not to pierce the flesh. Season generously with ground Sichuan peppercorns and sea salt.

    In a small saucepan, combine parsnips, heavy cream, and enough water to submerge. Simmer on medium heat for 15 minutes until parsnips are completely tender.

    Transfer parsnips and cream to a high-speed blender, add 1 tbsp butter and smoked sea salt, then blend on high until silky smooth. Keep warm.

    For the spicy fruit reduction, combine cherries, minced habanero, honey, red wine vinegar, and 2 tbsp water in a small pan. Simmer for 10 minutes until fruit breaks down, then pass through a fine-mesh sieve and whisk until glossed.

    Place duck breasts skin-side down in a cold stainless steel skillet. Turn heat to medium-low to render out fat slowly for 8-10 minutes until the skin is deep golden and crisp.

    Flip duck breasts, add Calabrian chili paste and remaining 2 tbsp butter to the pan juices, spooning the spicy molten butter continuously over the duck for 2-3 minutes (target internal temp: 130Β°F for medium-rare).

    Remove duck from heat and let rest on a cutting board for 5-7 minutes before thin-slicing against the grain.
