2 dry-aged duck breasts, skin crosshatch scored
1 tbsp Red Sichuan peppercorns, toasted and coarsely crushed
1 small habanero chili, finely minced (seeds removed)
1 tbsp Pixian fermented chili paste (Doubanjiang)
100g fresh kumquats, halved and deseeded
300g parsnips, peeled and roughly chopped
60ml heavy cream
50g unsalted cold butter, cubed
2 tbsp wildflower honey
40ml aged sherry vinegar
150ml reduced duck stock
15g micro cilantro and coriander blossoms for garnish
Maldon sea salt to taste

Cooking Instructions

    Prepare the Parsnip Velvet: Boil parsnips in salted water until fork-tender (approx. 12 mins). Drain and immediately transfer to a high-speed blender with heavy cream and 20g cold butter. Blend on high until ultra-smooth, then press through a fine tamis sieve. Season with salt and reserve warm.

    Craft the Spicy Gastrique: In a copper saucepan, melt honey over medium heat until dark amber. Carefully deglaze with sherry vinegar. Stir in minced habanero, half of the kumquats, and duck stock. Simmer gently for 10 minutes until glossy and syrupy. Strain through a fine chinois, pressing solids to release infused spicy oils.

    Season the Duck: Rub scored duck skin generously with Maldon salt and toasted crushed Sichuan peppercorns, working spices into the crosshatch scores.

    Render & Sear: Place duck breasts skin-side down in a cold, heavy-bottomed cast-iron skillet. Set heat to low-medium and render fat slowly for 10-12 minutes until skin turns deep mahogany and ultra-crisp. Drain excess fat continuously.

    Glaze & Rest: Brush flesh side with fermented chili paste. Flip duck breasts, baste with remaining cold butter for 2 minutes until internal temperature hits 54°C (130°F) for medium-rare. Remove duck to a warm resting rack and let rest for 7 minutes.

    Plating: Torch remaining kumquat halves until slightly charred. Swoosh parsnip purée across heated porcelain plates. Carve duck into precise 1cm thick slices and fan over purée. Drizzle vibrant spicy gastrique around the duck, top with charred kumquats and micro cilantro blossoms.
