Sichuan Eggplant

A refined symphony of heat and fat featuring crisp-skinned duck breast glazed in spiced mountain honey, offset by a fiery fermented Fresno gastrique, velvety parsnip silk, and charred baby leeks.
Prepare the Parsnip Silk: Simmer diced parsnips in salted water until knife-tender (approx. 12 minutes). Drain thoroughly and transfer to a high-speed blender. Purée with warm heavy cream and 35g of cold butter until completely smooth and mirror-glossy. Season with fine sea salt, pass through a fine chinois, and keep warm.
Craft the Gastrique: In a small saucepan over medium heat, caramelize the wildflower honey until deep amber. Deglaze immediately with Chinkiang vinegar and reduce by half. Whisk in the fermented Fresno chili paste, toasted ground red and green Sichuan peppercorns, and duck demi-glace. Simmer until it coats the back of a spoon, then mount with 20g of cold butter. Keep warm off heat.
Char the Leeks: Blanch baby leeks in boiling salted water for 90 seconds, then shock in an ice bath. Pat bone-dry. Sear on a ripping-hot cast-iron plancha with remaining 20g butter until blackened and tender. Season with salt.
Cook the Duck: Season the scored duck breasts generously with salt. Place skin-side down in a cold stainless-steel pan over medium-low heat. Slowly render the subcutaneous fat for 12–14 minutes, continuously draining excess fat, until the skin turns deep golden and glass-crisp.
Glaze and Finish: Flip the duck breasts and cook flesh-side down for 2 minutes to reach medium-rare (52°C internal). Brush the rendered skin generously with the Sichuan honey reduction. Rest the duck on an elevated wire rack for 8 minutes to redistribute the juices.
Plating: Carve each duck breast into 4 thick, clean slices. Swirl parsnip silk across the base of warmed coupe plates. Layer charred leeks alongside. Rest the carved duck against the leeks, spoon the glossy fermented Fresno gastrique across the meat, and finish with dots of bird's eye chili oil and flaky salt.
