Ingredients

200g all-purpose flour, sifted
125g chilled unsalted butter, cubed
80g granulated sugar
100g finely ground almond flour
2 large egg yolks
12 fresh black mission figs, halved
60ml premium smoked honey
250g cold mascarpone cheese
100ml heavy whipping cream
1 tsp dried culinary lavender buds
1 tbsp fresh thyme leaves, finely chopped
1 pinch Maldon sea salt

Cooking Instructions

  1. 01

    Pulse flour, 100g butter, and 40g sugar in a food processor until it resembles breadcrumbs. Add one egg yolk and pulse until dough forms. Chill for 30 minutes.

    Preheat oven to 180°C (350°F). Roll out pastry and line a 9-inch tart tin. Blind bake with weights for 12 minutes, remove weights, and bake for 5 more minutes.

    Cream remaining butter and sugar. Fold in almond flour, chopped thyme, and the second egg yolk to create the frangipane.

    Spread frangipane evenly over the par-baked tart shell. Arrange fig halves cut-side up on top.

    Bake for 20-25 minutes until the frangipane is golden and set. Remove and immediately brush figs with half of the smoked honey.

    Infuse heavy cream with lavender buds over low heat for 5 minutes (do not boil). Strain and chill completely.

    Whisk cold lavender cream and mascarpone together until stiff peaks form. To serve, dollop cream on the side, drizzle remaining smoked honey, and finish with a pinch of sea salt.
