Make the brown butter (beurre noisette) by melting the butter in a saucepan over medium heat until golden brown and nutty-fragrant. Strain through cheesecloth and let cool slightly.

Whisk pistachio flour, almond flour, and powdered sugar together. Lightly whisk the egg whites until frothy, then combine with dry ingredients. Fold in warm brown butter until smooth. Pipe into 4 silicone ring molds and bake at 180°C (350°F) for 12 minutes. Allow to cool.

Bloom the gelatin sheet in ice water for 5 minutes. Warm 50ml heavy cream with smoked honey and vanilla bean paste. Remove from heat, stir in bloomed gelatin, then pour over melted white chocolate to form a smooth ganache. Whip remaining 150ml heavy cream to soft peaks and gently fold into chocolate mixture.

Pour mousse into medium silicone dome molds and freeze for 4 hours until solid for smooth un-molding.

Simmer 150ml water, 30g caster sugar, and crushed cardamom pods for 10 minutes. Strain out pods, whisk in agar-agar, and boil hard for 1 minute. Pour into a shallow tray and chill until firmly set into a gel.

Transfer set cardamom gel to a high-speed blender and blend on high until a glass-like fluid gel forms. Strain through fine mesh and transfer to a piping bottle.

Dust the cut surface of fresh fig halves with remaining caster sugar and caramelize using a culinary blowtorch until dark and bubbling.

To assemble, place a pistachio financier base in the center of each chilled plate. Unmold a frozen mousse dome and place directly on top of the financier. Arrange caramelized figs alongside, pipe polished dots of cardamom gel around the plate, and finish with optional edible gold leaf.
