200g high-quality white chocolate, finely chopped
180ml heavy whipping cream (36% fat)
3 fresh rosemary sprigs, lightly torched for aromatics
1 sheet (2g) silver gelatin, bloomed in ice water
60g raw pine nuts, lightly toasted and finely ground
90g pastry flour or all-purpose flour
75g unsalted cultured butter, cold and cubed
40g confectioner's sugar, sifted
1 large egg yolk
8 ripe fresh Black Mission figs, halved lengthwise
30ml raw wildflower honey
60ml white or red verjus
100g fresh wild blackberries
1g agar-agar powder
2g flaky sea salt for finishing
12 fresh micro wood sorrel leaves for garnish

Cooking Instructions

    Caramelize the white chocolate: Preheat the oven to 120°C (250°F). Spread the chopped white chocolate evenly on a silicone baking mat. Bake for 35–45 minutes, stirring vigorously every 10 minutes with a dry spatula, until it turns a deep amber blonde. Transfer to a bowl.

    Infuse the cream: Lightly char the rosemary sprigs with a kitchen blowtorch to activate volatile oils. Combine with heavy cream in a small saucepan, bring to a simmer, cover, and infuse off the heat for 20 minutes. Strain, discard herbs, and re-warm the infused cream.

    Emulsify the ganache: Whisk the bloomed gelatin into the warm rosemary cream. Pour in thirds over the caramelized white chocolate, whisking from the center out to create a glossy, elastic emulsion. Immersion-blend until mirror-smooth. Pour into a flat dish, cover with plastic wrap touching the surface, and chill for at least 3 hours to set.

    Bake the pine nut sablé: Pulse flour, ground pine nuts, powdered sugar, and a pinch of salt in a food processor. Pulse in cold butter until sandy. Add egg yolk and pulse until dough comes together. Roll out between parchment sheets to 2mm thickness. Chill 30 minutes, then bake at 165°C (330°F) for 12–14 minutes until golden. Cool, then break into organic, artistic shards.

    Prepare blackberry-verjus gel: Simmer blackberries, verjus, and 1 tablespoon of water until fruit collapses. Puree and strain through a fine-mesh chinois. Whisk in agar-agar, boil for 1 minute, then pour into a shallow dish to set firm in the refrigerator. Once set, blend at high speed until a glossy fluid gel forms. Transfer to a squeeze bottle.

    Char the figs: Brush cut sides of fig halves with wildflower honey. Caramelize intensely using a high-heat culinary torch or sear face-down in a smoking-hot dry cast-iron pan for 45 seconds until caramelized and smoky.

    Plating and service: Dip a spoon into hot water and draw a tight quenelle of the smoked rosemary ganache onto the center of each chilled plate. Lean charred figs against the quenelle, anchor delicate sablé shards around the elements, dot precisely with blackberry-verjus fluid gel, and finish with a pinch of flaky salt and fresh micro sorrel.
