•100g fresh room-temperature egg whites (approx. 3 large eggs)
•200g ultra-fine caster sugar
•5g cornstarch, sifted
•5ml high-grade champagne vinegar
•2 firm Bosc pears, peeled, cored, and precision-diced to 5mm
•250ml white verjus
•Pinch of premium saffron threads
•300ml 36% heavy whipping cream, divided
•3 fresh Turkish bay leaves, lightly bruised
•1 whole Tahitian vanilla bean, split and scraped
•1 delicate pinch applewood-smoked Maldon salt
•40g roasted Piedmont hazelnuts, crushed and caramelized

Cooking Instructions

    Infuse the cream: In a small saucepan over medium-low heat, bring 150ml of the heavy cream, the bruised bay leaves, scraped Tahitian vanilla seeds, and the split pod to a gentle simmer (do not boil). Remove from heat, cover tightly, and allow to steep at room temperature for 30 minutes, then chill completely in the refrigerator.

    Poach the pears: Combine the verjus, 50g of caster sugar, and saffron threads in a non-reactive saucepan. Bring to a bare simmer until the sugar dissolves. Add the diced pears, reduce heat to low, cartouche with parchment paper, and gently poach for 10 minutes until tender yet retaining structure. Strain pears, reserving poaching liquid, and reduce the remaining syrup over medium-high heat until viscous and glossy.

    Prepare the meringue nests: Preheat oven to 95°C (200°F). In a pristine copper or stand-mixer bowl, whip egg whites on medium speed until soft peaks form. Gradually incorporate 150g of caster sugar one tablespoon at a time over 7 minutes until stiff, glossy, and sugar crystals are fully dissolved. Gently fold in cornstarch and champagne vinegar.

    Bake the meringues: Transfer meringue to a piping bag fitted with a 12mm round tip. Pipe four 8cm hollow-centered nests onto a parchment-lined baking sheet. Dry in the oven at 95°C for 75 minutes without opening the door. Turn off the oven and let shells rest inside for 45 minutes to achieve a crisp outer shell with a tender, marshmallow-like interior.

    Whip the bay leaf chantilly: Strain the cold infused cream to remove the bay leaves and vanilla pod. Combine with the remaining 150ml chilled heavy cream and a tiny pinch of applewood-smoked sea salt. Whip to medium-stiff peaks using chilled beaters.

    Plating and Assembly: Place a delicate ring of reduced saffron-verjus syrup in the center of four chilled dessert plates. Seat each meringue shell securely. Fill the cavity with the saffron-poached pear dice, crown with a generous quenelle of smoked vanilla-bay leaf chantilly, and garnish with caramelized Piedmont hazelnuts and micro-bay or wood sorrel leaves.
