An evocative Michelin-caliber dessert balancing the aromatic warmth of cold-smoked Tahitian vanilla, caramelized mission figs glazed in aged balsamic, refreshing pine needle gelée, and a delicate hazelnut financier crumble.
Cold-smoke 150 ml of the heavy cream using a handheld smoking gun with applewood chips under a covered cloche for 10 minutes. Warm the smoked cream with the scraped vanilla bean and pod to 75°C (167°F), cover, and steep for 20 minutes.
Melt the chopped white chocolate in a heatproof bowl. Strain the warm infused cream over the chocolate, add the bloomed gelatin sheets, and emulsify with an immersion blender until glossy. Cool to 28°C (82°F), then softly whip the remaining 100 ml of heavy cream and gently fold it into the ganache base. Pipe into quenelle silicone molds and chill for at least 3 hours.
For the pine needle gel: Blanch pine needles in boiling water for 10 seconds, then shock in ice water. Blend with 150 ml of water and 20 g of simple syrup until fine; strain through a superbag. Whisk in agar-agar, bring to a rolling boil for 1 minute, and pour onto a flat tray to set. Once set firm, blend into an ultra-smooth fluid gel and transfer to a squeeze bottle.
For the financier: Melt butter in a saucepan over medium heat until nutty and amber-brown (beurre noisette); strain and cool slightly. Whisk together almond flour, hazelnut flour, powdered sugar, and a pinch of salt. Whisk egg whites until frothy, fold into dry ingredients, then slowly incorporate the browned butter. Spread thinly (3 mm) on a silicone baking mat and bake at 180°C (356°F) for 10–12 minutes until deeply golden. Cool and break into rustic, delicate shards.
For the figs: Toss halved figs with aged balsamic vinegar and a light dusting of powdered sugar. Roast at 200°C (392°F) for 6–8 minutes until caramelized and tender, retaining their structural integrity.
Plating: Place a quenelle of smoked vanilla mousse slightly off-center. Arrange two roasted fig halves opposite the mousse. Dot the plate with droplets of vibrant pine needle gel. Garnish with crisp financier shards and a singular flake of Maldon salt atop the mousse.

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
