Pan-seared spiced duck breast served over a silky, Szechuan-infused parsnip purée, finished with a vibrant, fiery habanero and wild blackberry gastrique.

Ingredients

2 high-quality duck breasts (approx. 200g each)
1 tsp Szechuan peppercorns, toasted
1 tsp coriander seeds, toasted
1 tsp fleur de sel (plus more for finishing)
300g parsnips, peeled and roughly chopped
150ml heavy cream
150ml whole milk
1 garlic clove, smashed
45g cold unsalted butter, divided
150g fresh blackberries
1 small habanero pepper, seeded and finely minced
60ml aged balsamic vinegar
50g high-quality honey
30ml rich duck stock (or chicken stock)
Chili threads for garnish
Micro bull's blood or watercress for garnish

Cooking Instructions

    In a mortar and pestle, grind the toasted Szechuan peppercorns, coriander seeds, and fleur de sel into a medium-coarse spice rub.

    Score the skin of the duck breasts in a tight, crosshatch pattern, taking care not to cut into the meat. Generously season only the flesh side with the ground spice rub, leaving the scored skin side clean. Allow to sit at room temperature for 15 minutes.

    For the purée: In a medium saucepan, combine the chopped parsnips, heavy cream, milk, and smashed garlic. Bring to a gentle simmer over medium-low heat. Cook until the parsnips are completely tender, about 15-20 minutes. Strain, reserving the liquid. Transfer parsnips to a high-speed blender, add 30g of butter, and blend until velvety smooth, adding a splash of the cooking liquid if necessary to achieve a silky consistency. Season with salt to taste and keep warm.

    For the gastrique: In a small saucepan, combine the honey, balsamic vinegar, fresh blackberries, and minced habanero. Bring to a boil, then reduce heat and simmer until the blackberries break down and the mixture thickens to a syrupy consistency (approx. 10 minutes). Strain through a fine-mesh chinois, pressing on the solids to extract all liquid. Return the strained syrup to the pan, whisk in the duck stock, and bring to a simmer. Off the heat, whisk in the remaining 15g of cold butter to emulsify and create a glossy finish.

    For the duck: Place the duck breasts, skin-side down, in a cold, dry, heavy-bottomed skillet. Place over medium-low heat. This slow process renders the fat and yields an ultra-crispy skin. Drain the rendered fat continuously from the pan into a jar. Render for 12-15 minutes until the skin is deep golden brown and thin. Flip and sear the flesh side for 2-3 minutes for medium-rare (internal temperature of 54°C / 130°F). Rest the meat on a warm plate for 8-10 minutes before carving.

    To assemble: Spoon a generous pool of the warm parsnip purée onto the center of each plate. Slice the rested duck breasts at a sharp angle and fan them over the purée. Artfully drizzle the fiery habanero-blackberry gastrique around the plate. Garnish with a delicate nest of chili threads and microgreens, finishing with a pinch of fleur de sel on the duck.
