An exquisite, nutrient-dense composition featuring gently steamed wild halibut nestled in an umami-rich, crystalline mushroom dashi, complemented by crisp sea succulents and a vibrant, raw-pressed Meyer lemon finish.
To make the pristine dashi, combine the spring water, kombu, dried shiitake, bruised lemongrass, and ginger coins in a small saucepan. Heat very gently to 60°C (140°F) and hold for 25 minutes to extract pure aromatics without releasing bitterness. Strain through an ultra-fine chinois lined with cheesecloth. Season the broth with a small pinch of fleur de sel and keep warm at 65°C.
In a small bowl, whisk the Meyer lemon juice with the cold-pressed olive oil using a handheld frother until a delicate, translucent emulsion forms. Season lightly and set aside.
Blanch the quartered baby Tokyo turnips in salted boiling water for precisely 90 seconds until crisp-tender, then immediately shock in ice water. Drain and pat dry.
Season the halibut pavés lightly with fleur de sel. Place them in a parchment-lined bamboo steamer basket set over simmering water. Cover and steam gently at low-medium heat for 6 to 7 minutes, or until the core temperature reaches 48°C (118°F) for a succulent, translucent center.
To assemble, center each halibut pavé in a wide, pre-warmed shallow ceramic bowl. Artfully arrange the blanched Tokyo turnips, shaved purple daikon curls, and raw sea purslane around the fish.
Tableside, pour the hot, clarified shiitake-kombu broth around the base of the fish. Drizzle droplets of the Meyer lemon emulsion over the broth and finish the halibut with a whisper of fleur de sel.

The Caprese Salad Skewers recipe was a triumph! I prepared them for a party's barbecue and everyone loved them. The basil was so aromatic, the mozzarella so fresh, and the skewers were the perfect size and an appropriate.
