β€’1 tsp minced fresh thyme
β€’1 garlic clove, minced
β€’30 small wild leeks, chopped (white parts only)
β€’4 medium red potatoes, cubed
β€’salt & pepper
β€’6 cups vegetable stock

Cooking Instructions
